Winter Is Here Dinner
Brothers in Que are taking over The Bottega Kitchen for the night to bring us a taste of their award winning steak cooking technique.
Brothers in Que is a Competition BBQ Team consisting of Beau Brougham and Daniel Harris. A couple of best mates that share a love of food and cooking, especially outdoors over charcoal.
After some persuasion from Daniel the guys entered the competition BBQ scene. Their first attempt was Fat Drip BBQ Competition in October 2018 and out of 17 teams they came 12th in Burgers, 2nd in Tacos and 1st place steak. Winning steak earnt the guys an invite to the 2019 Steak Cookoff Association (SCA) Steak World Championship in Fort Worth Texas coming up in October.
The Menu $65 pp
To start will be our famous wood-oven slow roasted lamb pizza and our new release twice cooked pork belly pizza.
The feature dish will be a reverse seared 300gm grain fed scotch fillet cooked medium. The steak will be lightly dusted with spices (Salt/Pepper/Garlic/Paprika), and basted with duck fat throughout the cook.
The reverse sear consists of a low heat and light smoke (Cherry Wood) bringing the steak up to the required temperature. The steak is then rested and seared directly over coals at high heat until ready to serve.
The scotch will be served with garlic roasted potatoes, baby carrots and green beans with an accompaniment of homemade sauces.
We will complete the night with a rich dark chocolate mousse with a Uleybury Tawny Port jelly.
Nothing better than a BIG red wine to go with a juicy steak so we will have our reserve wines open for purchase by the glass!
The set menu will be $65pp and bookings will be a must for this event.
